From Law to the Plate: A Cross-Disciplinary Culinary Journey
Chef Charles Chen (陳治宇) began his path in legal studies, once envisioning a career in the judiciary. In the process of self-discovery, he turned to the culinary arts—transforming the discipline and precision of his legal training into a refined command of flavor.
His experience spans a Nordic wood-fire restaurant, nkụ, and the Michelin one-star Latin American restaurant ZEA, where he developed a keen sensitivity to balance, rhythm, and taste.
With the founding of Pang Taco, Chef Charles brings together vibrant global influences and local ingredients, establishing Taiwan’s first Mexican restaurant recognized by the Michelin Bib Gourmand. Each dish reflects a journey across disciplines—crafted with purpose, passion, and a quietly transformative spirit.
A Morning Journey Across Cultures
Created exclusively by Pang Taco’s chef, the Mexican Chicken Power Bowl begins with a base of spiced rice, gently awakened by the warm, smoky aroma of paprika. Topped with brined and oven-roasted chicken breast, the meat remains tender and juicy, complemented by vibrant layers of purple cabbage, bell peppers, onions, and fresh tomato salsa for a crisp, refreshing bite.
Finished with a signature yogurt sauce and green chili mayonnaise, the bowl achieves a perfect balance of richness and brightness. At Lakeshore, each morning becomes a moment of renewal—where this vibrant creation evokes the energy of a Latin marketplace at dawn, setting the tone for a day of lightness, vitality, and ease.
